Uruguayan Lamb Rack — Specifications
The lamb rack (carré d'agneau / rack of lamb) is the most premium primal cut of lamb, featuring 7–8 rib bones and a tender eye muscle with minimal connective tissue. Frigocerro's Uruguayan lamb rack is sourced from heavy lambs raised on the natural pastures of the Durazno region, Uruguay's traditional sheep-raising heartland.
Our lamb rack is available French-trimmed (frenched, cleaned bones) or untrimmed, vacuum-packed in pairs or individually. It is supplied to premium restaurants, hotel chains, and high-end retail importers in China, the EU, the UAE, Saudi Arabia, and beyond.
